A dinner for when you don't want meat and are more in a sweet mood - Crepes stuffed with topfen (Quark Cheese http://en.wikipedia.org/wiki/Quark_(cheese)) dusted with powdered sugar and drizzled with a homemade raspberry sauce!
Crepes:
75g Flour
1/2 Packet Vanilla Sugar
1/2 tsp Salt
1 1/2 tsp Sugar
50 ml Mineral water
150 ml Milk
1 egg
Mix all the ingredients together and let it sit for a minute or two. Then butter a hot pan and put 1/4cup of the Crepe mixture into the pan, swirling the pan so the batter thins out. Let cook for a few minutes, then flip. Make all your crepes and set aside (makes about 6 crepes) - Preheat oven to 350degrees F.
Topfen:
5 Tbsp Powdered Sugar
1 Package Vanilla pudding (powdered)
1 egg
Mix all together and set to the side.
Once the oven is preheated, start assembling your crepes. Take 1 crepe, open it up and spread a large spoonful of the topfen mix all over, leaving about 1 inch from one of the edges, so the stuffing doesn't ooze out.
Roll the crepe up and set in a baking pan (lightly buttered if needed) - repeat until all 6 crepes are filled. Put in the oven for about 15 minutes. Then remove and let sit for 5 minutes
....Dust with powdered sugar and drizzle with raspberry sauce (recipe to follow)
This recipe can be used with lots of different things, you could make a strawberry sauce, or cut up bananas and other fresh fruits and serve them on the side. Whatever you like!
Raspberry (or Strawberry) Sauce
1 bag frozen berries of your choice (I used berries Stefan and I had picked and then froze)
1 cup water
Sugar to taste
splash fresh squeezed lemon juice
Put berries in a pot on the stove
Add the water and sugar and bring to a boil for 5 minutes, stirring constantly. Reduce heat and let simmer until reduced by half and add a spritz of fresh squeezed lemon juice.
Use hand blender and puree until it's at a smooth texture that you like. Serve over your stuffed crepes, or anything else you like (i.e Ice Cream!)
